  • 4 cloves of garlic, unpeeled
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup heavy cream (or coconut milk for a vegan option)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash cubes with olive oil, salt, and pepper on a baking sheet.
  3. Add the unpeeled garlic cloves to the baking sheet.
  4. Roast in the oven for about 25-30 minutes, or until the squash is tender and the garlic is golden.
  5. Remove from the oven and let cool slightly.
  6. In a mixing bowl, combine the roasted butternut squash and garlic (squeeze the garlic out of its skin).
  7. Add the heavy cream and mash until smooth and creamy.
  8. Adjust seasoning with more salt and pepper if needed.
