  • 2 medium sweet potatoes, diced
  • 1 can of chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets, diced sweet potatoes, and chickpeas with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the mixture evenly on a baking sheet.
  4. Roast in the oven for 25-30 minutes, or until the vegetables are tender and golden brown.
  5. Remove from the oven and let cool slightly.
  6. Serve in bowls, garnished with fresh parsley.
