- 1 lb carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 2 tablespoons honey
- 1 teaspoon red pepper flakes
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the carrots with olive oil, salt, and pepper in a baking dish.
- Roast the carrots in the preheated oven for 25-30 minutes, or until tender and caramelized.
- While the carrots are roasting, whip the ricotta cheese until smooth and creamy.
- In a small saucepan, heat the honey and red pepper flakes over low heat until warm.
- Once the carrots are done, plate them and top with whipped ricotta.
- Drizzle the hot honey over the carrots and ricotta.
- Garnish with fresh herbs if desired and serve warm.
Notes
- For a spicier kick, increase the amount of red pepper flakes.
- Feel free to substitute the carrots with other root vegetables.
