- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/2 cup pomegranate seeds
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the ricotta cheese, pomegranate seeds, Parmesan cheese, garlic, oregano, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the ricotta mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
