Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, combine the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined.
  5. Pour the red velvet batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While the cake is baking, prepare the cheesecake filling by beating the cream cheese until smooth, then add the powdered sugar and vanilla extract.
  7. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
