A light and airy dessert combining the sweetness of white chocolate with the tartness of raspberries.
Ingredients

- 1 cup fresh raspberries
- 1 cup heavy cream
- 4 oz white chocolate, chopped
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin
- 3 tablespoons water
Instructions
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes.
- In a saucepan, melt white chocolate over low heat, stirring until smooth.
- Remove from heat and stir in the gelatin mixture until fully dissolved.
- In a separate bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
- Gently fold the melted white chocolate mixture into the whipped cream.
- In serving glasses, layer the raspberry puree and the mousse mixture alternately.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a stronger raspberry flavor, add more raspberries to the puree.
- Ensure the white chocolate is fully melted to avoid lumps.
- Can be garnished with additional raspberries or white chocolate shavings.
