- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

- 1/2 cup feta cheese, crumbled

- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Season the flank steak with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook the steak for about 4-5 minutes on each side for medium-rare.
- Remove the steak from the skillet and let it rest for a few minutes before slicing.
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
