- 1 cup milk
- 1/2 cup pumpkin puree
- 1 large egg
- 2 tablespoons melted butter
- Maple syrup for serving
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt.
- In another bowl, mix the milk, pumpkin puree, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple butter and syrup.
Notes
- For a richer flavor, use brown sugar instead of white sugar.
- Make sure not to overmix the batter for fluffy pancakes.
