- 1/2 cup sugar
- 1/2 cup butter, melted
- 2 large eggs

- 1 cup shredded coconut
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a square baking pan.
- Whisk the flour, cocoa powder, baking powder, and salt in a large bowl.
- In another bowl, mix the melted butter and sugar until creamy, then slowly add eggs and vanilla, blending until smooth.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- While the cake cools, whisk together the shredded coconut, powdered sugar, and enough milk for a spreadable consistency, adding pink food coloring if desired.
- Spread the coconut mixture over the cooled cake, then cut into bars and serve.

Store leftover bars in an airtight container at room temperature for up to three days, or freeze for up to three months.
