- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 can (20 oz) pineapple slices, drained
- 1/2 cup brown sugar
- 1/4 cup maraschino cherries
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Arrange the pineapple slices on top of the cheesecake mixture.
- Sprinkle brown sugar over the pineapple slices.
- Bake for 50-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
- Garnish with maraschino cherries before serving.
Notes
- For a richer flavor, use full-fat cream cheese.
- Make sure the pineapple slices are well-drained to avoid excess moisture.
- This cheesecake can be made a day in advance for better flavor.
