Ingredients

  • 1/2 cup shredded coconut
  • 1/4 cup lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed pineapple, shredded coconut, and lemon juice.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg to the butter mixture and mix well.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the pineapple mixture.
  7. Pour the batter into a greased mini muffin tin.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
