- 1 cup crushed pineapple
- 1/2 cup shredded coconut
- 1/4 cup lemon juice
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, softened
- 1 egg
- 1 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the crushed pineapple, shredded coconut, and lemon juice.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Add the egg to the butter mixture and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the pineapple mixture.
- Pour the batter into a greased mini muffin tin.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For a more intense flavor, use fresh pineapple instead of canned.
- These bites can be stored in an airtight container for up to 3 days.
- Feel free to add a glaze of lemon icing for extra sweetness.
