Description

A classy and flavorful Caesar salad with homemade dressing and crispy garlic croutons, perfect for any occasion.


Ingredients

  • 1 head Fresh Romaine Lettuce
  • 1/2 cup Homemade Dressing (garlic, anchovy paste, Dijon mustard, lemon juice, egg yolk, olive oil, Parmesan)
  • 2 cups Homemade Garlic Croutons (made from good-quality bread)
  • 1/4 cup Freshly Grated Parmesan Cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the bread into cubes, approximately 1-inch in size. Toss with olive oil, minced garlic, salt, and pepper until well coated.
  3. Spread the cubes on a baking sheet in a single layer, then bake for 10-15 minutes until golden brown and crispy, tossing halfway through.
  4. In a mixing bowl, whisk together minced garlic, anchovy paste, Dijon mustard, and egg yolk until combined.
  5. Gradually add olive oil while whisking until the dressing thickens and emulsifies.
  6. Stir in lemon juice, Parmesan cheese, salt, and pepper to taste.
  7. Tear the washed romaine into bite-sized pieces and place it in a large mixing bowl.
  8. Drizzle the homemade dressing over the greens and toss gently to coat each leaf.
  9. Add croutons and additional Parmesan on top, tossing lightly again.
  10. Transfer to serving plates and enjoy immediately while the croutons are still crispy!

Notes

For best results, dry lettuce thoroughly and prepare croutons fresh to maintain crunchiness.
