- 1 head Fresh Romaine Lettuce
- 1/2 cup Homemade Dressing (garlic, anchovy paste, Dijon mustard, lemon juice, egg yolk, olive oil, Parmesan)
- 2 cups Homemade Garlic Croutons (made from good-quality bread)
- 1/4 cup Freshly Grated Parmesan Cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the bread into cubes, approximately 1-inch in size. Toss with olive oil, minced garlic, salt, and pepper until well coated.
- Spread the cubes on a baking sheet in a single layer, then bake for 10-15 minutes until golden brown and crispy, tossing halfway through.
- In a mixing bowl, whisk together minced garlic, anchovy paste, Dijon mustard, and egg yolk until combined.
- Gradually add olive oil while whisking until the dressing thickens and emulsifies.
- Stir in lemon juice, Parmesan cheese, salt, and pepper to taste.
- Tear the washed romaine into bite-sized pieces and place it in a large mixing bowl.
- Drizzle the homemade dressing over the greens and toss gently to coat each leaf.
- Add croutons and additional Parmesan on top, tossing lightly again.
- Transfer to serving plates and enjoy immediately while the croutons are still crispy!
Notes
For best results, dry lettuce thoroughly and prepare croutons fresh to maintain crunchiness.
