- 2 ripe peaches, diced
Instructions
- Preheat the oven to 375°F (190°C) and grease a financier mold or muffin tin.
- In a bowl, mix almond flour, all-purpose flour, powdered sugar, and baking powder.
- In another bowl, whisk together the egg whites, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Fold in the diced peaches gently.
- Pour the batter into the prepared mold, filling each cavity about 3/4 full.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Let cool before removing from the mold and serve.
Notes
- For a richer flavor, you can brown the butter before adding it to the mixture.
