Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry sheets and cut them into squares.
- In a bowl, mix the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth.
- Fold in the diced peaches gently.
- Place a spoonful of the peach cheesecake mixture in the center of each pastry square.
- Fold the pastry over to create a triangle and seal the edges with a fork.
- Brush the tops with the beaten egg.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
