Ingredients

  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for the filling)
  • 2 cups powdered sugar (for the filling)
  • 2 tablespoons heavy cream or milk (for the filling)
  • 1 teaspoon vanilla extract (for the filling)
  • Pinch of salt (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. Beat the softened butter and sugar together in a large mixing bowl until light and fluffy, about two minutes. Add in the egg and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet mixture, mixing at low speed. Add the milk to bind the dough.
  4. Divide the dough into five portions and color each with gel food coloring.
  5. Scoop about a tablespoon of dough for each cookie, roll into a ball, and space them two inches apart on the baking sheet. Bake for 8-10 minutes until edges are set.
  6. Allow cookies to cool on the baking sheet for five minutes before transferring to a wire rack.
  7. For the filling, beat the softened butter until smooth, then gradually add powdered sugar, heavy cream, vanilla extract, and a pinch of salt until fluffy.
  8. Assemble the cookie sandwiches by spreading filling on the flat side of one cookie and pressing another on top.
  9. Let sit for about 10 minutes before serving.

Notes
