Description

Ingredients

  • 8 ounces pasta (rotini, fusilli, or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente. Drain and cool.
  2. Combine the veggies and cheese: In a large mixing bowl, combine cooled pasta, cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, sliced olives, and crumbled feta cheese. Mix gently until well combined.
  3. Make the dressing: In a separate bowl, whisk together olive oil, lemon juice, dried oregano, and salt and pepper to taste until well blended.
  4. Dress the salad: Pour the dressing over the pasta mixture and toss gently to ensure every ingredient is coated.
  5. Serve: Chill in the fridge for at least 30 minutes or serve immediately at room temperature.

Notes

For even more flavor, prepare the salad a day in advance. Customize with grilled vegetables or additional protein as desired.
