Ingredients

- 8 ounces pasta (rotini, fusilli, or penne)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente. Drain and cool.
- Combine the veggies and cheese: In a large mixing bowl, combine cooled pasta, cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, sliced olives, and crumbled feta cheese. Mix gently until well combined.
- Make the dressing: In a separate bowl, whisk together olive oil, lemon juice, dried oregano, and salt and pepper to taste until well blended.
- Dress the salad: Pour the dressing over the pasta mixture and toss gently to ensure every ingredient is coated.
- Serve: Chill in the fridge for at least 30 minutes or serve immediately at room temperature.
Notes
For even more flavor, prepare the salad a day in advance. Customize with grilled vegetables or additional protein as desired.
