- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup passionfruit puree
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased baking dish to form the crust.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the passionfruit puree and vanilla extract until fully combined.
- Pour the cheesecake mixture over the crust in the baking dish.
- Bake for 25-30 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before slicing.
Notes
- For a stronger passionfruit flavor, add more puree.
- These bars can be topped with whipped cream or fresh fruit.
- Store leftovers in the refrigerator for up to 5 days.
