- 1/2 cup passion fruit puree
- 1/2 cup sugar

- 2 teaspoons gelatin
- 1/2 cup whipped cream
- 1/2 cup crushed graham crackers
- 1/4 cup melted butter
- Fresh passion fruit for garnish
Instructions
- Prepare the crust by mixing crushed graham crackers with melted butter and pressing into the bottom of a springform pan.
- In a small saucepan, combine water and gelatin, letting it bloom for a few minutes.
- Heat the mixture gently until the gelatin dissolves, then remove from heat.
- In a mixing bowl, combine coconut cream, passion fruit puree, and sugar, then add the gelatin mixture and mix well.
- Fold in the whipped cream until fully incorporated.
- Pour the mousse over the prepared crust and refrigerate for at least 4 hours or until set.
- Garnish with fresh passion fruit before serving.
