Ingredients

- 1 cup quinoa
- 1 cup farro
- 2 cups vegetable broth
- 1 cup diced butternut squash
- 1 cup chopped kale
- 1/2 cup dried cranberries
- 1/4 cup pumpkin seeds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced butternut squash and sauté for 5 minutes.
- Stir in quinoa, farro, vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
- Add chopped kale and dried cranberries, stir, and cook for an additional 5 minutes.
- Remove from heat and let sit for 5 minutes before serving.
- Top with pumpkin seeds before serving.
