Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 1 cup diced butternut squash
  • 1 cup chopped kale
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced butternut squash and sauté for 5 minutes.
  3. Stir in quinoa, farro, vegetable broth, salt, pepper, and thyme.
  4. Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
  5. Add chopped kale and dried cranberries, stir, and cook for an additional 5 minutes.
  6. Remove from heat and let sit for 5 minutes before serving.
  7. Top with pumpkin seeds before serving.
