- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup almond flour
- 1/2 cup honey or maple syrup
- 1/2 cup raisins
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, protein powder, almond flour, baking soda, cinnamon, and salt.
- In another bowl, combine the honey (or maple syrup), melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Fold in the raisins.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- For a nut-free version, substitute almond flour with oat flour.
