- 1 cup cashews
- 1 cup shredded coconut
- 1/2 cup dates, pitted
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a food processor, combine cashews, shredded coconut, and dates. Pulse until finely chopped.
- Add honey (or maple syrup), almond butter, vanilla extract, and salt. Process until the mixture is well combined and sticky.
- Line an 8×8 inch baking dish with parchment paper.
- Press the mixture firmly into the prepared dish, spreading it evenly.
- Refrigerate for at least 2 hours or until firm.
- Once set, remove from the dish and cut into bars.
- Store in an airtight container in the refrigerator.
