- 100g unsalted butter, melted
- 500g cream cheese
- 150g sugar
- 3 large eggs
- 200ml sour cream
- 2 tablespoons Earl Grey tea leaves
- 200g fresh mulberries

Instructions
- Preheat the oven to 160°C (320°F).
- Crush the digestive biscuits and mix with melted butter to form the base.
- Press the biscuit mixture into the bottom of a springform pan.
- In a bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream, Earl Grey tea leaves, and vanilla extract.
- Gently fold in the mulberries.
- Pour the cheesecake mixture over the biscuit base.
- Bake for 50-60 minutes or until set.
- Let it cool before refrigerating for at least 4 hours before serving.

- For a stronger Earl Grey flavor, steep the tea leaves in warm water before adding to the mixture.
- Fresh mulberries can be substituted with other berries if desired.
