- 1 cup butter, melted
- 2 cups granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup mint frosting
- 8 ounces chocolate (for melting and topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Melt the butter and mix in the granulated sugar and brown sugar until smooth.
- Add the eggs one at a time, whisking vigorously after each addition.
- Stir in the vanilla extract.
- Fold in the flour, cocoa powder, and salt until just combined.
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Allow the brownies to cool completely.
- Spread the mint frosting over the cooled brownies.
- Melt the chocolate and pour it over the mint layer.
- Chill in the refrigerator until the chocolate is set.
- Cut into squares and serve.
Notes
For a dairy-free version, substitute coconut oil for butter.
