Description

Delicious mint brownies featuring a rich, fudgy base topped with creamy mint frosting and a glossy chocolate finish.


Ingredients

  • 1 cup butter, melted
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup mint frosting
  • 8 ounces chocolate (for melting and topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter and mix in the granulated sugar and brown sugar until smooth.
  3. Add the eggs one at a time, whisking vigorously after each addition.
  4. Stir in the vanilla extract.
  5. Fold in the flour, cocoa powder, and salt until just combined.
  6. Pour the brownie batter into the prepared pan and spread it evenly.
  7. Bake for about 25-30 minutes or until a toothpick comes out clean.
  8. Allow the brownies to cool completely.
  9. Spread the mint frosting over the cooled brownies.
  10. Melt the chocolate and pour it over the mint layer.
  11. Chill in the refrigerator until the chocolate is set.
  12. Cut into squares and serve.

Notes

For a dairy-free version, substitute coconut oil for butter.
