  • 4 Chicken Breasts (Substitution: Chicken thighs)
  • 3 tablespoons Maple Syrup (Substitution: Honey)
  • 2 tablespoons Dijon Mustard (Tip: Whole grain mustard)
  • 1 cup Quinoa or Brown Rice (Tip: Cooked leafy greens can be used)
  • Fresh Herbs (Suggestion: Parsley or cilantro)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare sweet potatoes: Peel and dice into cubes, toss with olive oil, garlic powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, turning halfway through.
  5. Marinate the chicken with maple syrup, Dijon mustard, olive oil, garlic powder, salt, and pepper for 10-15 minutes.
  6. Cook the marinated chicken in a skillet over medium-high heat for 4-5 minutes on each side until golden and cooked through.
  7. Prepare quinoa or brown rice according to package instructions.
  8. Assemble bowls with quinoa or rice topped with roasted sweet potatoes, sliced chicken, and drizzled with remaining sauce.
