Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned whole-rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar (for mango layer)
  • 2 tablespoons lemon juice
  • 2 teaspoons corn starch

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square pan with aluminum foil, spraying it lightly with cooking spray.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. Prepare the crust mixture by stirring in the flour, oats, granulated sugar, brown sugar, and salt until coarse crumbs form. Reserve one cup for the topping.
  4. Form the crust by pressing the remaining mixture firmly into the prepared pan.
  5. Mix the mango filling by adding chopped mango, additional granulated sugar, lemon juice, and corn starch into the same bowl and mix gently.
  6. Assemble the bars by spreading the mango mixture over the crust and sprinkling the reserved crumble on top.
  7. Bake for approximately 50 minutes or until the edges are firm and the topping is golden brown.
  8. Cool in the pan for at least an hour before lifting out and cutting into squares.
