- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 3/4 cup old-fashioned whole-rolled oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt
- 2 cups coarsely chopped fresh ripe mango
- 1/3 cup granulated sugar (for mango layer)
- 2 tablespoons lemon juice
- 2 teaspoons corn starch
Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square pan with aluminum foil, spraying it lightly with cooking spray.
- Melt the butter in a microwave-safe bowl and let it cool slightly.
- Prepare the crust mixture by stirring in the flour, oats, granulated sugar, brown sugar, and salt until coarse crumbs form. Reserve one cup for the topping.
- Form the crust by pressing the remaining mixture firmly into the prepared pan.
- Mix the mango filling by adding chopped mango, additional granulated sugar, lemon juice, and corn starch into the same bowl and mix gently.
- Assemble the bars by spreading the mango mixture over the crust and sprinkling the reserved crumble on top.
- Bake for approximately 50 minutes or until the edges are firm and the topping is golden brown.
- Cool in the pan for at least an hour before lifting out and cutting into squares.
