Ingredients

  • ¾ cup caster sugar
  • 125 g melted butter
  • 1 tsp vanilla extract
  • ¾ cup plain flour (sifted)
  • 2 cups lukewarm milk
  • ¼ cup icing sugar (for dusting)

Instructions

  1. Preheat your oven to 340°F (170°C) and line an 8-inch square pan with parchment paper.
  2. Whip the egg whites in a clean bowl with an electric mixer until stiff peaks form.
  3. Beat the yolks with the caster sugar until pale and fluffy.
  4. Incorporate melted butter and vanilla into the yolk mixture, whisking until blended.
  5. Sift the flour over the batter and stir carefully to prevent lumps.
  6. Add lukewarm milk slowly while stirring until the mixture is smooth.
  7. Fold in the whipped egg whites gently using a spatula.
  8. Bake the batter in the prepared pan for 35–60 minutes, until golden and set.
  9. Cool the cake completely in the pan, then dust with icing sugar before serving.

Notes

Make-ahead tips: This cake can be made a day in advance. For variation, you can try using almond extract instead of vanilla.
