Ingredients

- 2 cups apricots, pitted and chopped
- 1 cup water
- 1/4 cup lemon juice
- 1/2 cup sugar substitute (like stevia or erythritol)
- 1/4 teaspoon vanilla extract
Instructions
- In a saucepan, combine the chopped apricots and water. Bring to a boil over medium heat.
- Reduce heat and simmer for about 10 minutes, stirring occasionally.
- Add the lemon juice and sugar substitute, stirring until well combined.
- Continue to cook for another 10-15 minutes, or until the mixture thickens to your desired consistency.
- Remove from heat and stir in the vanilla extract.
- Pour the jam into sterilized jars and let it cool before sealing.
Notes
- Store in the refrigerator for up to 2 weeks.
- This jam can also be frozen for longer storage.
