A delicious and hearty Loaded Potato Taco Bowl that combines the flavors of tacos with the comfort of loaded potatoes.
Ingredients

- 4 large russet potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa
- 1 cup chopped green onions
- 1 can black beans, drained and rinsed
- 1 avocado, diced
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then rub with olive oil, salt, and pepper.
- Bake the potatoes for about 45-60 minutes until tender.
- While the potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned.
- Add the taco seasoning and follow package instructions to prepare the meat.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut the potatoes in half and scoop out some of the flesh to create a bowl.
- Fill each potato half with the seasoned meat, black beans, cheese, and any other desired toppings.
- Top with sour cream, salsa, green onions, and diced avocado.
