Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup chopped green onions
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then rub with olive oil, salt, and pepper.
  3. Bake the potatoes for about 45-60 minutes until tender.
  4. While the potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned.
  5. Add the taco seasoning and follow package instructions to prepare the meat.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly.
  7. Cut the potatoes in half and scoop out some of the flesh to create a bowl.
  8. Fill each potato half with the seasoned meat, black beans, cheese, and any other desired toppings.
  9. Top with sour cream, salsa, green onions, and diced avocado.
