  • 1 cup diced tomatoes
  • 1 avocado, diced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper in a mixing bowl. Spread them out on a baking sheet.
