- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the curry powder, turmeric, and cumin, and cook for another minute.
- Stir in the lentils, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Season with salt to taste and garnish with fresh cilantro before serving.
