- 2 lbs chicken thighs, boneless and skinless
- 2 stalks lemongrass, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- In a bowl, combine lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, vegetable oil, and lime juice to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill or a skillet over medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill or cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
- Let the chicken rest for a few minutes before slicing.
- Garnish with fresh cilantro and serve with rice or salad.
Notes
- For a spicier version, add chopped chili peppers to the marinade.
- This dish pairs well with jasmine rice or a fresh salad.
