Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, vegetable oil, and lime juice to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill or a skillet over medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill or cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
  6. Let the chicken rest for a few minutes before slicing.
  7. Garnish with fresh cilantro and serve with rice or salad.

  • For a spicier version, add chopped chili peppers to the marinade.
