- 1 (7 oz) package savoiardi ladyfingers (about 24)
Instructions
- Prepare the Lemon Syrup: In a medium saucepan, combine lemon juice, lemon zest, sugar, and water. Simmer over medium heat until the sugar dissolves.
- Make the Lemon Curd: Whisk together the egg yolks, whole egg, and 1¼ cup sugar. Add lemon juice, remaining zest, and salt. Cook over low heat until thickened, about 10 minutes. Stir in butter until melted.
- Prepare the Cream: Whip heavy cream to soft peaks. Blend mascarpone with ¾ cup sugar, cooled lemon curd, and vanilla until smooth. Fold in whipped cream.
- Assemble the Tiramisu: Dip ladyfingers in lemon syrup. Layer half in a dish, spread half of the mascarpone cream, and repeat.
- Chill: Refrigerate for at least 4 hours or overnight before serving.
