Ingredients

  • 1 cup of all-purpose flour
  • 1/2 cup of unsalted butter, softened
  • 1/4 cup of granulated sugar
  • 1/2 cup of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 large eggs
  • 1/4 cup of fresh lemon juice
  • 1 teaspoon of lemon zest
  • 1 cup of fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, and granulated sugar to form a crust.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In another bowl, beat the cream cheese and powdered sugar until smooth.
  5. Add eggs, lemon juice, and lemon zest to the cream cheese mixture and mix well.
  6. Pour the cream cheese mixture over the crust in the baking dish.
  7. Drop fresh raspberries on top of the cream cheese layer.
  8. Bake for 25-30 minutes or until set.
  9. Allow to cool before cutting into bars.

  • For a stronger lemon flavor, add more lemon zest.
