- 1 cup of all-purpose flour
- 1/2 cup of unsalted butter, softened
- 1/4 cup of granulated sugar
- 1/2 cup of cream cheese, softened
- 1 cup of powdered sugar
- 2 large eggs
- 1/4 cup of fresh lemon juice
- 1 teaspoon of lemon zest
- 1 cup of fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, and granulated sugar to form a crust.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Add eggs, lemon juice, and lemon zest to the cream cheese mixture and mix well.
- Pour the cream cheese mixture over the crust in the baking dish.
- Drop fresh raspberries on top of the cream cheese layer.
- Bake for 25-30 minutes or until set.
- Allow to cool before cutting into bars.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bars can be served chilled or at room temperature.
- Store leftovers in the refrigerator for up to 3 days.
