- 4 Salmon fillets
- 3 tbsp Butter (or olive oil)
- 3 tbsp Fresh lemon juice
- 2 cloves Garlic, minced
- 4 Potatoes (Russets or Yukon Gold), cubed
- 2 cups Broccoli florets
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional): Parsley or dill
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the potatoes into small cubes, toss in olive oil, and season generously with salt and pepper. Spread them on a baking sheet. Roast for 20-25 minutes, turning halfway through.
- Create the lemon butter sauce: melt butter in a frying pan, add minced garlic, and sauté until fragrant, about 1 minute. Stir in fresh lemon juice, then remove from heat.
- Season the salmon fillets with salt and pepper, then coat generously in the lemon butter sauce.
- Add the salmon and broccoli to the baking sheet with potatoes about 10 minutes before they finish roasting. Bake until the salmon flakes easily and broccoli is tender, roughly 10-15 more minutes.
- Plate the salmon, potatoes, and broccoli together. Drizzle any remaining lemon butter sauce over the top. Serve and enjoy!
Notes
You can prepare the lemon butter sauce in advance and store it in a sealed container. For an air fryer option, cook the potatoes at 400°F for about 15 minutes, then add the salmon and broccoli for the final 10 minutes.
