- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup fresh blueberries
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a bowl, mix flour, oats, brown sugar, melted butter, baking powder, and salt until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish.
- In another bowl, combine blueberries, lemon juice, lemon zest, and granulated sugar.
- Spread the blueberry mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top of the blueberries.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- These bars can be stored in an airtight container for up to a week.
- Serve with a dusting of powdered sugar for an extra touch.
