Description

Ingredients

  • 1/2 tsp baking soda

  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup yogurt or sour cream
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
  2. Combine dry ingredients by whisking together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the sugar and softened butter in a larger bowl until light and fluffy.
  4. Add the egg, yogurt, lemon juice, and lemon zest, blending until just combined.
  5. Incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in the fresh blueberries carefully.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean from the center.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
