- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
- Combine dry ingredients by whisking together flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the sugar and softened butter in a larger bowl until light and fluffy.
- Add the egg, yogurt, lemon juice, and lemon zest, blending until just combined.
- Incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the fresh blueberries carefully.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean from the center.
- Cool in the pan for 10 minutes before transferring to a wire rack.
