A delightful and unique jam combining the sweet flavor of apricots with the floral notes of lavender.
Ingredients

- 2 cups apricots, pitted and chopped
- 1 cup sugar
- 1/4 cup water
- 2 tablespoons dried lavender buds
- 1 tablespoon lemon juice
Instructions
- In a saucepan, combine apricots, sugar, and water. Cook over medium heat until the apricots are soft.
- Add the dried lavender buds and lemon juice, stirring well.
- Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, stirring occasionally.
- Once the jam has thickened, remove from heat and let it cool slightly.
- Pour the jam into sterilized jars and seal tightly. Allow to cool completely before storing in the refrigerator.
Notes
- For a smoother texture, blend the jam before pouring it into jars.
- Adjust the amount of sugar based on the sweetness of the apricots.
- Store in the refrigerator for up to 3 weeks.
