Instructions
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes in water until tender, then drain and mash.
- In a bowl, combine the mashed sweet potatoes, coconut milk, sugar, tapioca pearls, salt, vanilla extract, and cinnamon.
- Mix well until all ingredients are fully incorporated.
- Pour the mixture into a greased baking dish.
- Bake for 45 minutes or until the top is golden brown.
- Let it cool before serving.
