Ingredients
Scale
- 1 cup cooked quinoa
- 2 cups chopped kale
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/4 cup chopped walnuts
- 1 clove garlic, minced
- 1 egg
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine cooked quinoa, chopped kale, Parmesan cheese, breadcrumbs, walnuts, garlic, and egg.
- Season with salt and pepper, and mix until well combined.
- Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.

- These snack balls can be stored in the refrigerator for up to 5 days.
- Feel free to add other vegetables or spices to customize the flavor.
- For a vegan version, substitute the egg with a flax egg and omit the cheese.
