A vibrant and hearty pasta salad combining fresh kale, tender rotini, and creamy Caesar dressing.
Ingredients
Scale
- 2 cups cooked pasta (rotini or penne)
- 2 cups kale, chopped
- 1/4 cup Caesar dressing
- 1/4 cup grated Parmesan cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup croutons
- Salt and pepper to taste
Instructions
- Cook the pasta: Boil water in a large pot, add a pinch of salt, and cook the pasta according to the package instructions. Drain and let it cool.
- Prepare the kale and tomatoes: While the pasta cooks, wash and chop the kale into bite-sized pieces, and halve the cherry tomatoes.
- Mix the base: In a large mixing bowl, combine the chopped kale, cooled pasta, and halved cherry tomatoes.
- Dress the salad: Drizzle the Caesar dressing over the pasta mixture and gently toss until everything is well-coated.
- Add finishing touches: Sprinkle the grated Parmesan and croutons on top, then season with salt and pepper. Toss lightly again.
- Serve: Serve immediately or refrigerate for later enjoyment.
