Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced peaches (fresh or canned)
- 1/2 cup caramel sauce
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with jumbo muffin liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the melted butter, milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced peaches and half of the caramel sauce.
- Divide the batter evenly among the muffin liners, filling them about 3/4 full.
- Drizzle the remaining caramel sauce on top of each muffin.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- For extra flavor, add a pinch of cinnamon to the batter.
- These muffins can be stored in an airtight container for up to 3 days.
