- 2 chicken breasts, skinless and boneless
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Combine lime juice, olive oil, garlic powder, cumin, salt, and pepper in a large bowl.
- Add the chicken breasts to the marinade, coating them well.
- Marinate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, until cooked through.
- Slice the avocados and prepare the cherry tomatoes.
- Rest the grilled chicken for a few minutes, then slice it into strips.
- Serve the chicken topped with avocado slices and cherry tomatoes, garnishing with cilantro if desired.
