- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1 tbsp olive oil
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 tbsp lemon juice
- 1 clove garlic, minced (for Tzatziki)
- Salt and pepper to taste (for Tzatziki)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, pepper, and egg. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Drizzle olive oil over the meatballs.
- Bake for 20-25 minutes or until cooked through and golden brown.
- While the meatballs are baking, prepare the Tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper in a bowl.
- Serve the meatballs warm with Tzatziki sauce on the side.
Notes
- For extra flavor, let the meatball mixture sit for 30 minutes before forming into balls.
- These meatballs can be grilled instead of baked for a smoky flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
