- Additional sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the egg and beat until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
- Divide the dough and knead in 1-2 tablespoons of Jello to each portion until evenly colored.
- Chill the dough for 15-20 minutes.
- Roll into balls, coat in sugar, and slightly flatten each ball.
- Bake for 8-10 minutes, until the edges are set and tops begin to crack.
- Cool for 2 minutes on the baking sheet before transferring to a wire rack.
