Description

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken breasts and sear for 3-4 minutes on each side.
  5. Remove the chicken from the skillet and set aside.
  6. Toss the diced jalapeños and peaches into the same skillet and cook for 2-3 minutes.
  7. Whisk together honey, apple cider vinegar, water, and cornstarch in a small bowl.
  8. Pour the honey mixture over the jalapeños and peaches, stirring well.
  9. Return the chicken breasts to the skillet, spooning the sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes.
  11. Once done, let the dish rest before serving.

Notes

You can prepare the sauce a day in advance. This dish can also be made in an air fryer.
