  • 1/4 cup Cornstarch
  • 1 piece Egg White
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Vegetable Oil (for frying)
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Garlic, minced
  • 1 tablespoon Ginger, minced
  • 23 Dried Red Chilies or Crushed Red Pepper Flakes
  • 1/2 cup Tomato Ketchup
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Chili Garlic Sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sugar or Honey
  • 1/4 cup Water
  • Sliced Green Onions (for garnish)
  • Toasted Sesame Seeds (for garnish)
  • Thin Strips of Fried Onion or Bell Pepper (for garnish)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine your chicken, cornstarch, egg white, salt, and black pepper. Toss until coated. Let it marinate for at least 15 minutes.
  2. Heat the Oil: In your wok or skillet, heat about ½ inch of vegetable oil over medium-high heat.
  3. Fry the Chicken: Carefully add the marinated chicken pieces to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes.
  4. Remove the chicken and place it on a paper towel-lined plate.
  5. Sauté the Aromatics: In the same pan, reduce the heat to medium and add sesame oil, minced garlic, ginger, and dried chilies. Sauté until fragrant.
  6. Prepare the Sauce: Stir in the ketchup, soy sauce, chili garlic sauce, vinegar, sugar, and water. Cook for 2-3 minutes until the sauce thickens slightly.
  7. Combine Chicken with Sauce: Add the crispy chicken back into the wok, tossing until well coated. Remove from heat and garnish with green onions, toasted sesame seeds, and fried onions or bell peppers.

Notes

For a lighter option, consider air-frying the chicken. You can also replace chicken with firm tofu for a vegetarian version.
