Description

Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, whisk together flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Create a well, then add softened butter, egg, and vanilla extract. Stir until just combined.
  4. Gently fold in grated carrots.
  5. In a separate bowl, beat cream cheese with granulated sugar and egg yolk until smooth.
  6. Pour carrot batter into the pan, dollop cream cheese mixture on top, and swirl with a knife.
  7. Bake for 25–30 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely and slice into squares.
