Ingredients

- 2 large cucumbers
- 1 cup apple cider vinegar
- 1/2 cup honey
- 1 tablespoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black peppercorns
- 2 cloves garlic, sliced
Instructions
- Wash and slice the cucumbers into spears.
- In a saucepan, combine apple cider vinegar, honey, red pepper flakes, salt, black peppercorns, and garlic.
- Bring the mixture to a simmer over medium heat, stirring until the honey dissolves.
- Remove from heat and let the mixture cool slightly.
- Place the cucumber spears in a jar and pour the hot honey mixture over them.
- Seal the jar and refrigerate for at least 24 hours before serving.
Notes
- For extra heat, add more red pepper flakes.
- These pickles can be stored in the refrigerator for up to 2 weeks.
- Great as a snack or as a topping for sandwiches and salads.
