- 2 cups cooked beets, sliced
- 1/2 cup honey
- 1/2 cup apple cider vinegar
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 clove garlic, minced
Instructions
- In a saucepan, combine honey, apple cider vinegar, red pepper flakes, salt, black pepper, and minced garlic.
- Heat the mixture over medium heat until it begins to simmer.
- Add the sliced beets to the saucepan and stir to coat them in the mixture.
- Remove from heat and let it cool to room temperature.
- Transfer the beets and the pickling liquid to a jar and refrigerate for at least 24 hours before serving.
Notes
- For a milder flavor, reduce the amount of red pepper flakes.
- These pickled beets can be stored in the refrigerator for up to 2 weeks.
- Great as a topping for sandwiches or as a side dish with grilled meats.
