Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Gradually add the dry ingredients and buttermilk alternately, mixing gently until just incorporated.
- Fill cupcake liners halfway with batter, add a tablespoon of peach preserves, then top with more batter until three-quarters full.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Beat the cream cheese, powdered sugar, and milk until smooth, and frost each cooled cupcake.
- Top with fresh diced peaches, drizzle with honey, and sprinkle with sugar crystals.
