Description

Ingredients

  • 2 large eggs

  • 1/2 cup buttermilk
  • 1 cup peach preserves
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 cup diced fresh peaches
  • 2 tablespoons honey for drizzle
  • Sugar crystals for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Gradually add the dry ingredients and buttermilk alternately, mixing gently until just incorporated.
  6. Fill cupcake liners halfway with batter, add a tablespoon of peach preserves, then top with more batter until three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely.
  8. Beat the cream cheese, powdered sugar, and milk until smooth, and frost each cooled cupcake.
  9. Top with fresh diced peaches, drizzle with honey, and sprinkle with sugar crystals.
